Lentil Soup - again

This was hearty Lentil Soup with a small quick salad plate.

I followed the recipe that I updated last time, replacing chicken stock with beef stock (still only total 1/2 cup!), which made the soup lovely rich. Also, I added one more celery rib and used a red onion. I usually chop vegetables by using a knife, but used food processor to make the texture smoother. With these minor changes, the soup was delicious as usual!

I thought the layered salad of tomato, Baba ghanoush, cucumber would be a good idea to finish the leftover Baba.

We LOVE veggie!
