Soft Rye Bread with Spinach & Cheese

These were Soft Rye Bread with Spinach and Cheese.

Trying to make healthy savory lunch for J, I added rye, herbs, olive oil in dough and filled bread with spinach and low-fat cheese. No egg, no butter, only little bit of sugar to feed yeast.

Herbs in bread always make the house filled with a wonderful smell during baking.

They were very soft and cute.

Soft Rye Bread with Spinach and Cheese
MAKES 10

Bread dough
250 g bread flour
50 g rye flour
200 g water
15 g sugar
4 g salt
30g olive oil
2 tbs dried herbs (oregano, rosemary, etc)
5 g instant yeast

Filling
1 pack (9oz) frozen spinach, thrown, squeezed and drained
1 tbs dried onion powder
handful shredded mix cheese
ground black pepper

1. For bread dough, using bread machine, place all ingredients in the bread machine pan according to its manual, start its dough cycle.
2. For filling, mix all ingredients.
3. When the dough cycle is done, place the dough on the floured surface, divide into 10 pieces, roll and shape each in round, cover with dumped towel, rest 20 min.
4. Roll out one dough piece into flat oval shape, spread 1/10 of filling, roll the filling into the dough, like making a jelly roll. Make 10 rolls. Cover with lightly-oiled plastic wrap, rest 50 min.
5. Brush milk over the surface of rolls, make three cuts with a knife, bake 360F, about 20 min.
