Tofu Salad

This was Tofu Salad - tomato, cucumber, broccoli, and Tofu with chive and sesame lemon dressing - a chilled and light dinner.

I cooked tofu fully and quickly blanched broccoli to adjust to other ingredients' firmness, and chilled both in an ice water for a while. Sesame lemon dressing was mixture of lemon juice, rice vinegar, my favorite special low-sodium soy sauce, and a little of sesame oil.

Tasty and great to offset to the cheesy calzones and red wine chocolate cake!
