Pasta alla Norma, again

This was pasta with eggplant, Pasta alla Norma, again.

With Farfalle this time. I didn't have two but only one can of diced tomatoes, so mixed one can of diced tomato and one can of tomato puree. Maybe because of that, the dish was a little too sweet for me.
Nevertheless I enjoyed meaty eggplant and a hint of anchovy. Cooks Illustrated also has a recipe of Pasta alla Norma with olive and capers, which sounds like our favorite pasta, Puttanesca. I would love to try it next time.
