Three Bird Roast

A few days before Christmas day, we went to Skipton. There was a market on the street in front of Skipton Castle. One of the market vendors was Scott's Game. J stared at their birds. Oh-oh. In short, we came back with a big Three Bird Roast.
Three birds - duck, partridge and pheasant. Plus pork sausage stuffing inside and bacon wraps outside.
Bake about two hours and done!
We had the roast with salad and Porcini mushroom risotto. It seemed that J liked the roast while it was so-so for me who is not usually a big fan of gamy things. I thought pork sausage stuffing was kinda spongy in texture, too. Anyway, game is a traditional winter feast in England. When in England, do as the English do. That's a key to admire a different culture, I believe.
By the way, visiting Skipton Castle, one of the most complete and best preserved medieval castles in England was interesting. There were only few other visitors. The over 900-year-old stone castle was peaceful.
There was woodland adjacent to the castle, called Skipton Castle Woods. We strolled in the wood.

I knew later that the market in front of the castle also has a long history - back to medieval times, "when a royal charter granted consent to The Lord of the Honour of Skipton Castle to hold a fair on Skipton High Street. This consent still holds true today - and the current owner of Skipton Castle grants the rights to hold the market on four days each week," according to an online source. I wonder what was sold in the market in the 12th century. Three bird roast?
