J's Country Omelette

This was J's country omelette.

I don't know what made him want to make omelette. He studied how Jacques Pepin cooked country style omelette and started making one for the weekend breakfast. His first omelette turned out very well! A big golden pillow-like omelette!! It has Gruyère cheese and fresh chive from our garden. Inside was soft and runny; outside was brown and buttery. Served with my homemade sourdough white sandwich bread, what a lovely morning treat it was!
