Stir-fried Tofu & Veggies with Rice

This was stir-fried Tofu and veggies with rice.

I like to make stir-fried dish because it's ultra easy and quick so that I can start preparation just before 30 minutes before dinner time, and I can use up any any leftover veggies in the refrigerator - scallions, mushrooms, green pepper and carrots this time. I usually keep a block of Tofu in hand. It's an excellent source of protein, calcium, iron and more. I can eat Tofu everyday. Seriously.
The pungent sauce, made with Soy source, Hoison sauce, ginger, rice vinegar, Sake, and etc., successfully made J quickly finish his bowl up! A happy meat-less dinner!
