Eggplant & Pork Stir Fry with Miso


The original recipe I followed called for green bell pepper along with pork and eggplant, but I skipped it. Maybe because of the luck of green bell pepper and/or because the pork wasn't like Japanese paper-thin sliced fatty pork, the result was fine although a bit different from what I expected. I felt something missing. I will try again with pepper next time. I just bought a jar of Japanese Miso for this dish. Including this dish, any good recipes with Miso are welcome.
