Fritattensuppe with Fritatten from Austria & Homemade Clear Beef Broth
At the last day of our Austria trip, we found dried Frittaten, thinly sliced pancake at Julius Meinl am Graben. Since J liked Ftittaten in his soup at Plachutta, we bought some so that we could make our own Fritattensuppe at home. Actually we made it quite soon after we came back from the trip.
Fritattensuppe looked simple - Frittaten placed in clear beef broth. I could take an advantage of store-bought beef broth for a quick easy prep; however, I wanted to respect the special Frittaten that we personally brought back from Austria. In order to make clear beef broth from scratch, I adapted a recipe for clear beef broth by a Japanese celebrity chef that I found online, which called for only six ingredients and a few steps. It was so easy to make the soup. It just required time and attention; three hour gentle simmering without boiling.
I placed a handful of Frittaten in a bowl and poured the broth over the dried noodles. The result was great! The soup was hearty and tasty. The store-bought Frittaten tasted fine and had a very nice texture. Interestingly the noodles didn't get soggy or melt in the soup. My homemade broth also tasted pretty good.
We bought three bags of Frittaten and used only one bag for our two-day meals. I look forward to our next traditional Austrian soup dinner. It will come soon, I am sure.
