Potato-Caramelized Onion Gratin with Manchego Cheese

This was potato-caramelized onion gratin with Manchego cheese.

It was a little twist of my usual potato-leek gratin. I used caramelized yellow onion for leek and added very good artisanal Manchego cheese from Spain. for Gruyere.
It was pretty good! Although Manchego seemed separated into oil instead of stringy, each bite was cheesy tasty!!
