Red Lentil Stew

This was Red Lentil Stew.

J was eager to make something with our slowcooker during this holiday season. He checked the Cook's Illustrated's slowcooker cooking book and picked this healthy totally vegetarian savory curry. Good choice! He did almost of all preparation works, push the "on" button, and set a timer. Good job! After 4 hour cooking on high, diced fresh tomatoes jointed to the stew party. After another 10 minutes cooking, frozen pea followed the tomatoes.
Seasoning with salt and pepper and garnishing with fresh cilantro, the curry was ready to be served. It was gently spiced, but still aromatic. Coconut milk made the curry creamy. Another great recipe from the book!
