Smoked Brisket Fajitas

These were smoked Brisket Fajitas.

It was months ago but at least this year when J smoked Brisket. Oh, I went back to this blog and found out that was Easter. We enjoyed the brisket very much, with homemade BBQ sauce and as fajitas, and saved some in the freezer to recreate those delicious moments in the future. This was the time. I cut the leftover brisket into strips, quickly cooked them with onion, green bell pepper and home-mixed fajita spice. Because the brisket had a great smoky flavor and was well-seasoned, this simple cooking could make wonderful fajita filling.
Other fillings were commercial stuff. Please don't judge me. I carefully selected each item. The jar salsa was the brand highly-recommended by Cook's Illustrated, Guacamole was made with flavorful Pico de Gallo recipe, not a classic "plain" recipe. And cheese was low fat Mexican mix as a healthier option. Plus the right size of flour Tortilla that looked freshest at the grocery store. The combination of all was one of the best fajitas I made before!
